How to Make Diwali Soya Chunks Pulao
1.Prepare the Soya Chunks
Prepare 50 g of Sadabahar Soya Chunks according to the instructions on your pack. Once safe to handle, rinse and gently squeeze out the excess water. Set aside.
2.Cook the Rice
Rinse the basmati rice and cook according to its pack instructions. Keep the grains tender and separate. Set the cooked rice aside.
3.Cook the Vegetables and Spices
Heat the oil in a wide pan. Add cumin seeds, bay leaf, cardamom and cinnamon. When fragrant, add the optional onion and cook until lightly golden.
Stir in the ginger, carrot and peas. Add a small splash of water if needed and cook until the vegetables are tender.
4.Combine Everything
Add the prepared soya chunks, salt and garam masala. Toss gently to coat the chunks in the spices.
Fold in the cooked rice without breaking the grains. Heat through on low heat, then taste and adjust the seasoning.
5.Garnish and Serve
Finish with fresh coriander and serve warm. Pair with cucumber raita or a fresh salad for a festive meal made for sharing.
Tips for a Delicious Diwali Pulao
Keep the Rice Fluffy
Cook the rice separately and fold it in gently. Too much stirring can break the grains.
Remove Excess Water
Gently squeeze the prepared soya chunks after rinsing so extra water does not dilute the spices.
Make It Your Way
Skip the optional onion for an onion-free version. Keep the spices mild and serve chutney separately so guests can adjust the flavour.
Serve with Simple Sides
Pair the pulao with cucumber raita or a fresh salad. Add coriander just before serving for a fresh finish.
